Green papaya salad

A delicious high fibre, gluten free, lactose/dairy free side dish that's great for livening up family gatherings or even a quick mid-week meal.

Ingredients

  • 2 tsp olive oil
  • 2 limes, juice only
  • ½ tsp salt
  • 2 tsp brown sugar
  • 2 tsp soy sauce, salt-reduced
  • ¼ tsp chilli flakes, optional
  • ½ cup unsalted peanuts, roughly chopped
  • half of a medium green papaya peeled and grated (250g)
  • 1 carrot, peeled and grated
  • 1 small red onion, finely diced
  • ½ cup mint leaves, torn
  • ½ cup basil leaves, torn

Method

  1. Place sliced red onion in a bowl of cold water (this helps to reduce the pungent flavour and strong aftertaste). Set aside while you prepare the dressing.
  2. In a bowl combine oil, lime juice, salt, brown sugar, soy sauce and chilli flakes. Drain onions and add to bowl with dressing.
  3. Reserve a few fresh herbs and peanuts for garnish. Add grated papaya and carrot, remaining herbs and peanuts to the dressing, stir well to coat
  4. To serve, place salad on a plate, top with remaining mint, basil and nuts.

Tips

  • Green papaya can be found at most Asian grocery stores and some green grocers. You can also substitute green mango when in season.
