Cornflake energy balls

How about this for a crunchy twist on your classic energy ball.

Ingredients

  • 70g chopped walnuts, lightly toasted
  • 70g almonds, lightly toasted
  • 2 tbs linseed, sunflower seeds, or pumpkin seeds
  • 170g dates, pitted, chopped
  • 100g soft dried apricots or figs, chopped
  • 100g cranberries, pitted and chopped
  • 50g goji berries (optional)
  • 1 tbs Sanitarium Smooth Peanut Butter
  • 1 orange, zest of
  • 2 tbs raw cacao powder or cocoa powder
  • 1 tbs ground cinnamon
  • 50g Skippy™ Cornflakes, crushed

Method

  1. Step 1

    Combine the walnuts, almonds and seeds in a food processor and whizz until fine crumbs. Add the dates, apricots, cranberries and goji berries and blend until a smooth paste.
  2. Step 2

    Add the peanut butter, orange zest, cacao or cocoa powder and cinnamon. Pulse for two minutes or until the mixture starts to form into a ball.
  3. Step 3

    Divide into golf ball-sized portions and roll into balls between lightly wet palms. Roll in the crushed Skippy™ Cornflakes.
  4. Step 4

    Store in an airtight container in the fridge for up to two weeks, or freeze for longer storage.

Tips

  • Goji berries can easily be substituted for sultanas or any other dried fruit.
  • Raw cacao powder is found at gourmet supermarkets and health food stores.
