Banana Crunch Waffles

Sweetened with bananas, these fluffy waffles also have a delightful cereal crunch.

Ingredients

  • 1 1/4 cups wholemeal flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon cinnamon
  • 1 egg
  • 2 ripe bananas, mashed
  • 1 cup So Good™ Oat Milk No Added Sugar
  • 1 teaspoon vanilla extract
  • 3/4 cup Sanitarium™ Cluster Crisp™ Triple Berry

TOPPINGS (per waffle):

  • 1 teaspoon maple syrup
  • 1 tablespoon low-fat Greek yoghurt
  • 2 strawberries,
  • 3 blueberries
  • 1 teaspoon of Sanitarium Cluster Crisp Triple Berry

Method

  1. Step 1

    Whisk together the flour, baking powder, and ground cinnamon in a large mixing bowl.

  2. Step 2

    In a separate bowl, beat the egg and then add the mashed bananas, oat milk, and vanilla extract. Mix well.

  3. Step 3

    Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.

  4. Step 4

    Gently fold in the Sanitarium Cluster Crisp Triple Berry until it is evenly distributed throughout the batter.

  5. Step 5

    Pour an appropriate amount of batter onto lightly greased waffle iron, spreading it out slightly to cover the waffle grid.

  6. Step 6

    Close the waffle iron and cook until the waffles are golden brown.

  7. Step 7

    Carefully remove the waffles from the iron and repeat with the remaining batter.

  8. Step 8

    Serve waffles with toppings
