Ingredients
- 1 packet Vegie Delights™ Savoury Mince
- 1 Tbsp olive oil
- 1 garlic clove, crushed
- 1/2 brown onion, diced
- 1/2 small red chilli, diced
- 1 - 2 Tbsp reduced salt taco seasoning
- 1/4 cup water
Salsa
- 1 medium tomato, diced
- 1 Lebanese cucumber, diced
- 1/2 red onion, finely diced
- 10 fresh chives, finely sliced
- Juice of one lemon, divided
- Pinch of salt & pepper, to taste
To serve
- 1 avocado, diced
- 4 small tortillas
- Lime juice
- Fresh coriander leaves
Method
- In a medium bowl, combine tomato, cucumber, onion, chives, and juice of half a lemon. Mix well, and season to taste with salt and pepper. Combine diced avocado and juice from remaining lemon half in a separate bowl.
- Drizzle olive oil into a large skillet over medium heat. Add onion, chilli, and garlic. Cook for 3 - 4 minutes, until onion has started to soften.
- Add Vegie Delights Savoury Mince to the onion mixture, and break up with a spatula. Add taco seasoning and water. Mix well, and cook 2 - 3 minutes until warmed through.
- Warm tortillas and fill with taco mince. Top with salsa, avocado, and fresh coriander. Serve with lime wedges.
